Community Highlights: Meet Brett Tuft of Maiale Rosa Wood Fired Pizzeria

Today we’d like to introduce you to Brett Tuft.

Hi Brett, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
We started as a food truck!
My son needed more individual help at home when he was 2, I left my Executive Chef job, bought a 1937 dodge truck and transformed it into a mobile pizza kitchen(2013), wood fired oven included. Our goal was to offer a truly healthy, great tasting pizza for both adults and children. After 4 years of operating the truck, we were approached to open a brick and mortar. Our truck has since moved to catering only and our store is almost 9 years old!

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
There have been many obstacles/tests with a 80year old vehicle, but the old girl is still running and serving weddings, company parties, graduations, or any other pizza party needs. As far as the store front, building a brand, staffing, supply chain problems, COVID, inflation, family issues, goverment issues, etc…the restaurant industry is not easy!
But, we’ve made it over 8 years and have many loyal clients.

Maiale Rosa Wood Fired Pizzeria is an ingredient driven, old world Italian style pizzeria with a focus on sustainable, non-GMO, fresh produce. Coupled with, our long fermented, hand stretched sourdough crust, award winning cheese selections, and high quality salumi help create
our flavorful, healthy, authentic pizzas.
We offer in-house dining, take-away, & off-site catering with our 1937 Dodge pizza truck.
