Hi Emily and Josh, we’d love for you to start by introducing yourself.
Wild Hare Coffee & Cocktails really started as one of those “what if we did this?” ideas that we decided to actually run with!
After owning The Studio in downtown Pendleton and seeing how much we love creating spaces where people can gather, have a drink, and enjoy themselves, we started dreaming about a way to take that experience on the road. Eventually, that dream turned into Wild Hare — our vintage horse trailer turned mobile coffee and cocktail bar.
We wanted Wild Hare to feel fun, welcoming, and a little whimsical while still being something that could fit beautifully into weddings, private parties, and community events. We serve everything from handcrafted coffee and fun non-alcoholic drinks to beer, wine, and signature cocktails, and we love being able to customize what we offer to fit each event.
Like most things we do, it’s been a lot of learning as we go, plenty of big ideas, and probably a few “wild hare” moments along the way. We’re excited about how much it has grown and even more excited about where we can take it next.
At the end of the day, we just really love creating experiences that bring people together — and Wild Hare gives us another really fun way to do that.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Definitely not completely smooth — but we’re not sure any small business journey really is!
One of our biggest challenges has simply been figuring things out as we go. Wild Hare started as an idea we were excited about, and turning that idea into an actual mobile business meant learning a lot about licensing, insurance, equipment, event logistics, pricing, and all of the little details you don’t necessarily think about when you first say, “Hey, let’s turn a horse trailer into a bar!”
We’re also balancing Wild Hare alongside The Studio, our other jobs, and raising a family, so finding the time to grow a new business has definitely been a learning experience. There have been plenty of moments where we’ve had to adjust our plans, rethink an idea, or realize something was going to take a little longer than we originally hoped.
But we’ve learned a lot through those challenges. We’ve gotten better at knowing what works, what doesn’t, and what kind of experience we want Wild Hare to provide. We’re still very much growing and figuring things out, but that’s also part of what makes it exciting.
We’ve learned that sometimes you just have to be willing to try something, make mistakes, adjust, and keep chasing the next wild hare.
Appreciate you sharing that. What should we know about Wild Hare Coffee and Cocktails?
Wild Hare Coffee & Cocktails is our mobile bar and coffee service based in Eastern Oregon. We specialize in bringing a fun, beautiful, and personalized drink experience to weddings, private parties, community events, and other celebrations.
One of the things that makes us a little different is that we aren’t just a mobile cocktail bar — coffee is a big part of who we are too! Depending on the event, we can serve handcrafted espresso drinks, specialty coffees, Italian sodas and other non-alcoholic options, beer and wine, signature cocktails, or a combination of them. We love working with our clients to create a menu that actually feels like *their* event rather than offering the exact same thing every time.
Our vintage horse trailer bar is also a huge part of the Wild Hare experience. We wanted to create something that wasn’t just functional, but added to the atmosphere of an event. Our style is a little whimsical, a little vintage, and inspired by the countryside and garden feel of classic storybook illustrations. We want the trailer, the drinks, the menu, and all of the little details to feel like they belong together.
We’re probably most proud of the personality we’ve been able to build into the Wild Hare brand. We don’t want to feel overly formal or cookie-cutter. We want people to walk up to the bar, order something really good, have a conversation, and feel like they’re part of something fun.
At the heart of it, we’re in the business of helping people celebrate. Whether we’re making a signature cocktail for a wedding, pulling espresso shots at an event, or creating a completely custom drink menu, we love getting to take someone’s idea and make it a little more memorable.
Wild Hare is still growing, and we have lots of ideas for where we’d like to take it. More than anything, we want people to know that when you book us, you’re not just getting drinks — you’re getting a personalized experience created by two people who genuinely love bringing people together.

We’d just love for people to know how grateful we are to get to build something like Wild Hare here in Eastern Oregon. Supporting a small business really does mean supporting a family, a dream, and usually a whole lot of late-night brainstorming!
We’re excited to keep growing Wild Hare, meeting new people, and being part of more weddings, celebrations, and community events. We have plenty of ideas still up our sleeves, and we’re having a lot of fun seeing where this little “wild hare” takes us.
