Conversations with Amber Amos

Today we’d like to introduce you to Amber Amos.

Hi Amber, we’d love for you to start by introducing yourself.
Westside started as a garage based catering company in Southern California. We built and built and 4 months after opening, we were invited to compete in Tacolandia, a curated event put on by the LA Times (invite only) and our rootbeer carnitas taco took 2nd overall out of about 1000 tacos. From there, we started doing Entertainment industry work and snagged the TCA awards under our name in 2016.

After a lot of hard work and networking in L.A., we relocated to central Oregon in 2017 and opened Westside as a food truck. We were voted best food truck in Central Oregon 7 years in a row and gained a lot of momentum. Travel magazine names us as one of the best food trucks in the entire west coast

In 2020, weeks opened a farm to table restaurant called Westside Local and it opened the week the Covid lockdown happened. More on that later. It was voted 2nd best restaurant twice and we had to let it go when the building sold in 2023 and we were not given the option to renew.

We operate in Tumalo now still slanging funky, hand crated taxis in handmade tortillas made with love. As scratch as a kitchen can get, we build everything from the ground up. We are open 7 days a week at the Bite in Tumalo.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
I’m a classically French trained chef who graduated from Le Cordon bleu in 2008

What does success mean to you?
Out. Work. Everyone. That’s what it takes. You must love what you do and have an enthusiasm and drive that seems almost psychotic to the average person. The dream and vision have to be so unwavering that failure isn’t a scenario you’re willing to entertain. Eyes forward, always.
