Today we’d like to introduce you to Annette Solis.

Annette, we appreciate you taking the time to share your story with us today. Where does your story begin?
Bombaci Pasta started in Spring of 2024 from a desire to bring high quality fresh pasta to Bend. Gabriel was a professional chef and I (Annette) come with lots of front of house and hospitality experience. We specialize in handmade stuffed pasta that incorporates local seasonal ingredients whenever possible. We also have bronze die extruded noodles and a few staple sauces. Our customers rely on the fact that we always have something new to try and to expect that no matter what we make, our number one priority is to be delicious.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Growing a small business always comes with challenges. Some you can prepare for and others are total surprises. For example, choosing to use high-quality ingredients like unenriched Italian flour and local ingredients can be difficult to upkeep from sourcing and costing, but high quality is something we simply won’t compromise on. We take every challenge as a lesson to learn and improve. We are so grateful that our pasta has widely been received with enthusiasm.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Bombaci Pasta is a high quality handmade fresh pasta brand that not only creates access to high quality pasta for your home, but also has education around our products so whether you are a chef or a novice home cook, you will be able to create inspired dishes with our pasta. We specialize in handmade stuffed pasta that highlights local seasonal ingredients that reflects the bounty of Central Oregon. Our menu changes often so there is always something new to try. While right now we are a small team of two, husband and wife Gabriel and Annette, we are excited to continue to grow thanks to our incredible community.

Alright, so to wrap up, is there anything else you’d like to share with us?
We sell mostly at Farmer’s markets during the summer but do sell in a handful of stores around Bend. We have a preorder system available on our website that allows you to order for local pick up at Bend Roots Mercantile. You don’t want to miss out on our holiday menu, for Christmas we make a chocolate hazelnut ravioli! We also offer pasta classes. All of this info is available on our website.
