Today we’d like to introduce you to Toney Chay.
Hi Toney, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Our story began in 2015 with a simple idea: create something that would last for generations while bringing people together. What started as a family business focused on craft beverages has grown into 7Bev Corporation—a vertically integrated company that combines farming, beverage production, hospitality, construction, and event experiences under one vision.
One of our first major projects was transforming a historic building in West Linn into what is now Ale & Cider House. We wanted to create more than just another taproom—we wanted a community gathering place where people could enjoy exceptional craft beverages, live music, food, chess nights, local events, and celebrations. Today, Ale & Cider House has become a destination where families, friends, and visitors come together to experience local hospitality and discover our own handcrafted products alongside guest beverages.
As our passion for cider grew, we launched Queen Orchard, our premium hard cider and fruit wine brand. Rather than relying on artificial flavors, we focused on producing beverages made with real fruit and traditional cider-making principles. Our commitment to quality has earned multiple awards and continues to drive us to create unique products that showcase the incredible fruit grown in the Pacific Northwest.
To fully control the quality of our products from the ground up, we took an ambitious step by purchasing a 65-acre farm in West Linn. That property became Queen Orchard Farm & Cidery, where we planted thousands of cider-specific apple trees that will supply our future cider production. The farm is much more than an orchard—it is becoming a destination in its own right, featuring a large event center, tasting room, brewery, cidery, seasonal events, weddings, festivals, and agricultural experiences that connect people to where their beverages are made.
Most recently, we expanded into brewing with 7Bev Brewing. Our goal is to bring the same creativity and craftsmanship that built Queen Orchard into the world of beer, producing everything from classic lagers to hop-forward IPAs and experimental seasonal releases. Together, our brewery, cidery, orchard, taproom, and event venues allow us to create a complete experience that few companies can offer.
Looking ahead, our vision is to continue growing responsibly while remaining family-owned and community-focused. We are investing in expanding our brewery and cidery operations, growing our estate orchard, hosting more events, and creating memorable experiences for everyone who visits. Whether someone joins us for a pint, a wedding, a concert, a farmers market, or simply to relax with friends, our mission remains the same: to craft exceptional beverages, build meaningful places, and create traditions that people will enjoy for generations to come.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Like most businesses, our journey has been anything but a smooth road. Building a company that spans agriculture, manufacturing, hospitality, and events means every day brings a new challenge. We’ve renovated historic buildings, developed a 65-acre farm, planted thousands of cider apple trees that take years before producing fruit, navigated complex permitting and licensing, and continued investing in equipment and infrastructure while growing the business.
The hospitality industry has also presented its own challenges. We opened and expanded during a time when labor shortages, inflation, and rising costs affected nearly every business. Rather than slowing down, we focused on creating experiences that people couldn’t find anywhere else—from live music and community events to unique craft beverages made in-house.
One of the biggest lessons we’ve learned is the importance of thinking long-term. Many of our investments, especially our orchard and production facilities, won’t reach their full potential overnight. Growing cider apples takes years, building a brand takes patience, and earning customer loyalty happens one visit at a time. We’ve always been willing to invest today for what the business can become tomorrow.
If there’s one thing that has carried us through every obstacle, it’s our family and our team. Everyone has worn multiple hats, solved problems together, and shared the same vision of creating something that will last for generations. Looking back, the challenges have ultimately made us stronger and have shaped the company into what it is today.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
At 7Bev Corporation, our mission is to create destination experiences centered around exceptional craft beverages, hospitality, and community. What makes us unique is that we don’t just make beer and cider—we’ve built an ecosystem where guests can experience every part of the journey, from the orchard to the glass.
Our family of brands includes Ale & Cider House, Queen Orchard Farm & Cidery, Queen Orchard Hard Cider, and 7Bev Brewing. Ale & Cider House serves as our flagship taproom and community gathering space, featuring dozens of rotating craft beers and ciders, live music, local food vendors, trivia, chess nights, private events, and a welcoming atmosphere for everyone. It’s a place where people come not only for great drinks but to create memories with family and friends.
Queen Orchard Farm & Cidery is the next chapter of our vision. Located on 65 acres in West Linn, Oregon, the property is home to thousands of cider-specific apple trees, our growing brewery and cidery operations, a large event center, tasting room, and beautiful outdoor spaces. Our goal is to create one of the Pacific Northwest’s premier agritourism destinations, where guests can experience the complete craft beverage process while enjoying weddings, festivals, concerts, seasonal celebrations, and community events.
Our beverages are another point of pride. Queen Orchard Hard Cider is crafted with real fruit and premium ingredients, earning multiple awards while offering a wide variety of unique flavors. At the same time, 7Bev Brewing allows us to explore everything from traditional European styles to bold, hop-forward IPAs and creative seasonal releases. Every product is developed with a focus on quality, innovation, and consistency.
What truly sets us apart is our long-term vision. Rather than simply operating a brewery or a taproom, we’re building a destination that combines agriculture, manufacturing, hospitality, entertainment, and community into one experience. Guests can enjoy beverages made from fruit grown on our own farm, attend live events, celebrate life’s biggest milestones, and watch our vision continue to grow year after year.
Above all, we’re proud that we’ve remained a family-owned company driven by passion rather than shortcuts. Every improvement we make—from planting orchards to expanding our production facilities to creating new community events—is made with future generations in mind. We want people to know that when they visit any of our brands, they’re not just stopping in for a drink—they’re becoming part of a story that is still being written.
We’d love to hear about how you think about risk taking?
We believe that building any successful business requires taking calculated risks. We’re not interested in taking risks for the sake of it, but we’re willing to make bold decisions when we believe in the long-term vision and have done the work to understand the opportunity.
One of our biggest risks was purchasing and developing a 65-acre farm to create Queen Orchard Farm & Cidery. Planting thousands of cider apple trees is a long-term investment that takes years before producing a meaningful harvest, and at the same time we committed to building a brewery, cidery, tasting room, and event center on the property. It’s a significant investment of time and capital with no immediate return, but we believe creating an authentic farm-to-glass experience will set us apart for decades to come.
Another major risk was renovating and opening Ale & Cider House. Transforming a historic building into a modern craft beverage destination required extensive renovations, regulatory approvals, and a substantial financial commitment. We believed that West Linn deserved a place where people could gather, enjoy locally made beverages, and build community, and that vision has proven to be worth the investment.
We’ve also chosen to continually reinvest in our business rather than focus on short-term profits. Whether it’s purchasing professional brewing and cider-making equipment, expanding our event venues, planting more orchard acreage, or creating new experiences for our guests, we’ve consistently invested in the future. Those decisions require confidence and patience because many of them won’t reach their full potential for years.
Our approach to risk is simple: think long term, do your homework, and never compromise on quality. Every major decision we make is guided by one question: “Will this create a stronger business and a better experience for our customers ten or twenty years from now?” If the answer is yes, we’re willing to make the investment and put in the work to make it successful.
Some of our greatest achievements—from award-winning ciders to expanding into brewing and creating destination venues—exist today because we were willing to bet on a vision that others couldn’t yet see. For us, the biggest risk would have been thinking too small.
