Today we’d like to introduce you to Sara Brennan.
Hi Sara, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My husband and I founded Trail Distilling nearly ten years ago, inspired by a shared passion for spirits and a desire to create something meaningful in our community.
My appreciation for spirits began early in our marriage during a trip to Scotland. I was fascinated by the country’s rich whisky heritage and the art and science of distillation, particularly what distinguishes Scotch whisky from American whiskey. That experience sparked a lasting interest in spirits and ultimately helped shape our vision for Trail Distilling.
With Oregon City’s rich history and heritage, growing community, and emerging bar and restaurant scene, it felt like the perfect place and time to establish “the first distillery in the first city west of the Mississippi.” We envisioned Trail Distilling as more than just a distillery; we wanted it to become an active part of the community and contribute to the unique sense of place that makes Oregon City special.
Our 20th wedding anniversary brought us back to Scotland, where I had the opportunity to attend the Scotch Whisky Institute in Edinburgh. I have also earned Level II certification in Spirits through the Wine & Spirit Education Trust (WSET), based in London and recognized as a global leader in spirits education.
As we approach our ten year anniversary this October, it’s hard to believe how far Trail Distilling has come. What began as a passion project has grown into an internationally recognized producer of premium spirits, earning accolades from prestigious competitions and organizations around the world, including The Fifty Best Gins in the World, the Asia International Spirits Competition, the New York International Spirits Competition, and the International Women’s Spirits Competition. In 2022, I was honored to receive the coveted title of Best Woman Distiller.
What sets Trail Distilling apart is our unwavering commitment to quality and craftsmanship. We begin with pristine Cascadian glacial water and naturally harvested grains, carefully selecting and controlling each ingredient. Our approach allows us to oversee every step of the process—from grain to glass—ensuring that each spirit reflects the quality, character, and craftsmanship that define Trail Distilling.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Life rarely follows a smooth or predictable path. One and a half years ago, I lost my husband, my partner and best friend of nearly 30 years, as well as my business partner and co-founder of Trail Distilling.
In addition to navigating an immense personal loss, I have taken on the responsibility of carrying forward the business and the legacy we built together. There is a great deal to manage, but preserving what we created and honoring the vision we shared is important to me.
The distilling industry is facing challenging times worldwide, and Trail Distilling is not immune to those challenges. Yet entrepreneurship teaches us to adapt, evolve, and find new paths forward. I remain committed to meeting those challenges with resilience, making thoughtful adjustments when necessary, and continuing to build upon the foundation we created together.
Through it all, our customers have remained an incredible source of encouragement and inspiration. Their support, loyalty, and appreciation for what we create make every challenge and every bump in the road worthwhile. They are a meaningful part of the Trail Distilling story and a reminder of why we continue to do what we do.

Trail Distilling is a certified farm distillery, with a commitment to authentic, locally rooted production. We have grown our own rye for our rye whiskey, connecting our spirits directly to the land and agricultural heritage of Oregon.
From the beginning, we have invested in world-class production equipment and technology designed to support precision, consistency, and exceptional quality. Combined with traditional craftsmanship and a commitment to authenticity, these investments have helped establish Trail Distilling as a respected and recognized producer of premium spirits.
But great spirits are never made by equipment alone—they are made by people. I could not do what I do without my dedicated team. Every member plays an essential role in keeping Trail Distilling running and maintaining the standards we have worked so hard to establish. It truly takes a team to make Trail what it is today.
Are there any important lessons you’ve learned that you can share with us?
Learning to wear many hats! Every small business owner learns this lesson, one way or another. Building and running a business requires flexibility, resourcefulness, and a willingness to step into whatever role is needed. From operations and production to marketing, customer relationships, and day-to-day problem-solving, no two days are ever quite the same.
