Nikki, we appreciate you taking the time to share your story with us today. Where does your story begin?
Hi! I’m Nikki, wife, homeschooling mama of 4, and owner of The Fold Bread Co. a microbakery in Hillsboro. Like many busy families, we love bread, but I struggled to find one that was nourishing, simple in ingredients, and easy to access. As a functional nutritionist by trade, I’ve always believed in eating real food with clean ingredients.
I began making bread at home for my family and friends, focusing on simple organic ingredients, and a process that worked with our everyday life.
What started in my home kitchen has slowly grown into our very own microbakery (all my husband’s idea and a Facebook marketplace post he created. It took off from there!) Today, The Fold Bread Co. exists for busy families who want better baked goods without feeling overwhelmed by long ingredient lists.
We offer carefully made artisan bread and treats with easy-to-read organic ingredients, so nourishing meals feel simpler, healthier, and more doable throughout the week.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
We’ve had zero struggles – all smooth sailing. I’m kidding! Running our home bakery has come with several challenges including very late nights, long hours on my feet, sleepless nights, early mornings, burnt cookies, and failed products. As we continue to improve on our process, remembering our why, prayer, and seeing the joy our products have brought to our community have kept us going.
A meaningful quote that puts it all in perspective for me is this – “ What a privilege to be tired from the work you once begged for. What a privilege to feel overwhelmed by the growth you used to dream about. What a privilege to be challenged by a life you created on purpose.”
It truly makes it all worth it!

The Fold Bread Co. is a home bakery in Hillsboro, OR serving busy families who want better baked goods without feeling overwhelmed.
One thing that sets us apart is we use very simple and clean ingredients that are also nourishing. For example, organic A2 milk, organic ceylon cinnamon, and house-made brown sugar in our maple glaze brown butter cinnamon rolls, organic sourdough starter in our chocolate chip cookies (both are fan favorites and what we’re known for!), and maple syrup & honey as our main sweeteners.
We love serving our community, whether through our weekly porch pick-ups, monthly pop ups, or wholesale delivery of classic baked goods with a nourishing twist 🙂

Weekly Porch Pick-Up:
If you’re local to the Hillsboro area, join our porch pick-up list! All orders are placed through preorder. All this means is every week the menu opens and closes on a set schedule and you get notified so your bread can be prepared slowly, baked fresh, and made with care from start to finish.
Here is how preorders work:
Menu opens: Sunday
Menu closes: Tuesday
Bake day: Wednesday
Pickup: Thursday
Local Grocery Store:
We are happy to also have our maple glaze brown butter cinnamon rolls and sourdough chocolate chip cookies currently being sold at Helvetia Farm Market, a local grocery store. We love partnering with other businesses and providing our baked goods wholesale to local stores for more people to access!
